Open an image, create an adjustment layer by clicking the Create a New Fill or Adjustment Layer (the half-black, half-white circle) icon at the bottom of the Layesrs panel, and choosing Black & White. Tweak the sliders for maximum contrast and click OK. Select the adjustment layer's mask and grab the Brush tool(B). Set your Foreground colour to black and paint any area to bring back its original colour. Have fun!
